iichiko Saiten

Co-created with top U.S. bartenders, iichiko Saiten is a 43% ABV Japanese spirit crafted through all-koji fermentation using 100% barley koji. Centered on spirits distilled under atmospheric pressure, it achieves a bold character that holds its own in cocktails. The name Saiten—meaning “adding new color to the world”—expresses the wish for this honkaku shochu to bring fresh vibrancy to cocktails. Its depth of flavor, born of iichiko’s refined mastery of koji and fermentation, symbolizes that new color in the cocktail world.

Tasting Note
Aromas of chocolate, cream, and rich barley—derived from atmospheric distillation—rise on the nose. On the palate, layers of barley richness and fruity notes unfold with complexity. The flavor begins with the umami of koji, then gently reveals hints of sweetness and bitterness, leading into a long, lingering finish.
